Low carb peanut butter cups

Preparation:

  1. Prepare a bain-marie by bringing water to the boil in a pan and placing a heatproof bowl over it. Add the dark chocolate to the bowl and allow it to melt slowly. Stir occasionally until the chocolate has melted.

  2. Pour a teaspoon of the melted chocolate into each silicone muffin tin. Place the mold in the freezer and allow the chocolate to set for about 5 minutes.

  3. In a microwave-safe bowl, combine the sugar-free peanut butter and vanilla protein powder. Heat the mixture in the microwave for about 20 seconds to make it smoother.

  4. After the first layer of chocolate has set in the freezer, use a teaspoon to add the peanut butter and protein powder mixture to each chocolate layer. Smooth the surface of the peanut butter mixture with a spoon.

  5. Carefully pour the remaining melted chocolate over the peanut butter mixture until you no longer see the peanut butter and protein powder mixture.

  6. Place the muffin tins back in the freezer for at least 10 minutes or until they are firm. As soon as they are firm, remove them from the cups. It is ideal to place the cups in a paper muffin tin. This way, you can not only enjoy them on their own, but also give them as gifts.
